5 Common Refrigerated Prep Table Problems and How to Fix Them

Your refrigerated prep table is a workhorse in your commercial kitchen, keeping ingredients fresh and ready to go. However, like any piece of equipment, it can run into some common issues that impact its performance.

As the person responsible for keeping your kitchen running smoothly, it's important to know what problems to look out for and how to address them. 

1. Thermostat Control Failure

Your refrigerated prep table relies on a thermostat to turn the compressor on and off, maintaining the ideal temperature inside. But sometimes, that thermostat can act up.

If the thermostat is malfunctioning, it can cause the compressor to run constantly. Even when the interior is already cold enough. It could also fail to turn the compressor on at all, leaving your ingredients at risk of spoiling. 

2. Poor Door Seals

Those rubber gaskets around the edge of the door play a crucial role in keeping cold air in and warm air out. Over time, they can crack, tear, or simply stop creating a tight seal.

When the door seals are compromised, it allows warm outside air to seep into the cabinet. This forces the compressor to work overtime to try and maintain the set temperature, which can lead to excessive ice buildup inside.

3. Keeping the Lid Closed

One of the most important things you can do to maintain your refrigerated prep table's performance is to keep the lid closed whenever it's not actively in use.

When the lid is left open, it allows the cold air inside to escape. This forces the compressor to work overtime to try and maintain the set temperature, which can increase your energy costs and lead to premature wear on the compressor.

4. Proper Ventilation and Clearance

Another key factor in keeping your refrigerated prep table in good shape is ensuring it has adequate space and ventilation around it. These units need at least six inches of clearance on all sides to allow the heat generated by the compressor to properly dissipate.

If the airflow around the prep table is restricted, it can cause the compressor to overheat and fail prematurely. For best performance keep containers and food products away from interior fans to help circulate cool air and keep the interior at optimal temperature.

5. Clogged Condensate Drain

One last common problem with refrigerated prep tables is a clogged condensate drain. As the unit cools, it generates moisture that needs to be drained away. But if that drain line gets blocked, it can lead to standing water building up inside the cabinet.

This water buildup creates unsafe conditions and can also contribute to issues like excessive ice formation. Causes of a clogged drain can include food debris, mineral deposits, or even kinks in the drain tubing itself.
